At Body By Kai we believe that eating healthy should be simple. In our group we frequently share macro friendly recipes that the whole family will enjoy! Breakfast, lunch, dinner, snacks, or healthy desserts, you can feel good about what you and your family are eating.

PROTEIN PUMPKIN COOKIES

PROTEIN PUMPKIN COOKIES

Ingredients:

 

  • 2, 14oz cans Pumpkin

  • ½ c SF Maple Syrup

  • ½ c Natural Peanut Butter

  • 4 c Old Fashioned Oats

  • 4 scoops of Whey protein (I use Titan Nutritions Vanilla Wafer)

  • 2 tsp Vanilla Extract

  • 1-2 tsp Pumpkin Spice

  • 1-2 tsp Cinnamon

 

Directions:

 

  • Pre-heat oven oven to 350. Spray a cookie sheet with a non-stick spray and set aside.

  • Combine all ingredients into a large mixing bowl. Mix well. 

  • Using an ice cream scoop, scoop the batter onto the sprayed cookie sheet.

  • Bake for 12-15 minutes. I like to check mine around 12 minutes then continue baking 1-2 minutes at a time. I personally like mine to be slightly gooey in the center!

 

Macros per cookie:

 

This recipe makes about 21 large cookies. Each cookie has:

134 calories

8.5g of protein

16g of carbs

4g of fat

 

Feel free to add some dark chocolate chips to the batter or simply place a few on top of each cookie if you're wanting something more sweet. Of course this will change the macro count slightly. Enjoy!
